Ingredients

  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sharp cheddar cheese, freshly shredded (113g)
  • 1 tablespoon ranch seasoning mix (½ packet)
  • 8 slices bacon, cooked crispy and finely crumbled
  • ⅓ cup fresh chives, finely minced (16g)
  • ⅓ cup pecans, finely chopped (36g)

Instructions

  • Prepare the cheese mixture:
    • In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, and ranch seasoning
    • Mix thoroughly until well combined and smooth
  • Form the balls:
    • Scoop about 1 tablespoon of mixture for each ball
    • Roll between your palms to form 16 uniform balls
    • Place on a parchment-lined baking sheet
    • Refrigerate for 1 hour or until firm
  • Prepare the coating:
    • In a shallow bowl, combine the crumbled bacon, minced chives, and chopped pecans
    • Mix well to ensure even distribution
  • Finish and serve:
    • Roll each chilled cheese ball in the bacon mixture, pressing gently to coat
    • Arrange on a serving platter

Notes

Storage & Serving

  • If not serving immediately, cover loosely with plastic wrap and refrigerate
  • Remove from refrigerator 15 minutes before serving
  • Best enjoyed within 2-3 days when stored properly refrigerated
