2 cups fresh blueberries
1 cup old-fashioned rolled oats
1 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon baking powder
Zest of 1 lemon
Preheat oven to 375°F (190°C).
In a mixing bowl, combine the oats, flour, granulated sugar, brown sugar, melted butter, vanilla extract, salt, and baking powder. Mix until crumbly.
Reserve 1/2 cup of the oat mixture for the topping. Press the remaining mixture into the bottom of a greased 8×8-inch baking dish.
