Ingredients

1 cup water

1/4 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

Vegetable oil for frying

1 cup granulated sugar (for coating)

2 tablespoons ground cinnamon (for coating)


Instructions

  1. Combine water, butter, sugar, and salt in a medium saucepan. Bring to a boil over medium heat.
  2. Reduce heat to low and add the flour all at once, stirring vigorously until the dough forms a ball and pulls away from the sides of the pan.
  3. Remove from heat and let the dough cool for a few minutes. Add the eggs one at a time, stirring well after each addition until the dough is smooth and glossy. Stir in the vanilla extract.
  4. Transfer the dough to a piping bag fitted with a star tip.
  5. Heat vegetable oil in a large, deep saucepan to 350°F (175°C). Pipe 1-inch lengths of dough directly into the hot oil, cutting with scissors as you go.
  6. Fry the churro poppers in batches for 2-3 minutes, turning occasionally until golden brown. Transfer to a paper towel-lined plate to drain excess oil.
  7. While still warm, roll the churro poppers in a mixture of sugar and cinnamon until fully coated. Serve warm.
