Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional)

Fresh basil or parsley for garnish

Instructions

  1. Place the chicken breasts between two pieces of plastic wrap or in a zip-top bag. Pound to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add the garlic. Sauté for 1-2 minutes until fragrant.
  4. Stir in the sun-dried tomatoes and cook for another minute. Add the chicken broth, scraping up any browned bits from the bottom of the pan.
  5. Reduce the heat to low and stir in the heavy cream. Simmer for a few minutes until the sauce begins to thicken.
  6. Stir in the Parmesan cheese and red pepper flakes. Return the chicken breasts to the skillet and simmer for 5-7 minutes until the chicken is cooked through and the sauce has thickened.
  7. Garnish with fresh basil or parsley and serve hot.
