Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 ½ cups granulated sugar
  • ⅓ cup water
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  • Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
  • Mix Wet Ingredients: In a large bowl, mix the pumpkin puree, vegetable oil, eggs, sugar, water, and vanilla extract until well combined.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until blended. Be careful not to overmix.
  • Pour into Pan: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake: Bake in the preheated oven for 55-65 minutes or until a toothpick inserted into the centre of the bread comes out clean.
  • Cool and Serve: Let the pumpkin bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
