Ingredients

  • 1 pound Polish kielbasa
  • 2 tablespoons extra light olive oil
  • 2 tablespoons fresh parsley (or 1/2 tablespoon dried)
  • 2 garlic cloves
  • 1 teaspoon sea salt

Instructions

  • Preheating your oven to 400°F and line your baking sheet with parchment paper.
  • Prep your ingredients:
    • Cut the potatoes into 1/4-inch thick rings (or quarter smaller potatoes)
    • Slice the kielbasa into 3/4-inch thick rings
    • Mince the fresh parsley
    • Press the garlic cloves
  • In your mixing bowl, combine:
    • Sliced potatoes and kielbasa
    • Olive oil
    • Pressed garlic
    • Sea salt
    • Parsley
  • Spread everything evenly on your prepared baking sheet.
  • Bake for 40-45 minutes, stirring halfway through, until your potatoes are beautifully browned and crispy.
