Ingredients

1 lb beef stew meat, cubed

1 tablespoon olive oil

1 onion, chopped

3 cloves garlic, minced

3 carrots, sliced

2 celery stalks, chopped

3 potatoes, diced

1 can (15 oz) diced tomatoes

4 cups beef broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

1 cup green beans, chopped

1/2 cup corn kernels

1/2 cup peas

Fresh parsley, chopped (for garnish)


Instructions

In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown on all sides. Remove and set aside.

In the same pot, add the chopped onion and minced garlic, sautéing until translucent.

Return the beef to the pot and add the carrots, celery, potatoes, diced tomatoes, beef broth, thyme, oregano, bay leaf, salt, and pepper.

Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour.

Add the green beans, corn, and peas to the pot, and continue to simmer for another 20 minutes or until the vegetables are tender.

Remove the bay leaf and adjust the seasoning if needed.

Serve hot, garnished with fresh parsley.
