Ingredients
1 box of vanilla cake mix (plus ingredients specified on the box)
Eggs (as required by the cake mix)
Canola oil (as required by the cake mix)
Water (as required by the cake mix)
Gel food coloring: black, purple, green
Vanilla Royal Icing Ingredients:
3 egg whites
1/4 teaspoon cream of tartar
3 cups powdered sugar (plus an extra 1/2 cup on standby)
1 teaspoon vanilla extract
Gel food coloring: purple, green, black
1 package of edible eyes
3 disposable piping bags
Instructions
1. Prepare the vanilla cake mix according to the instructions on the box.
2. Divide the batter evenly into three separate bowls.
3. Add black gel food coloring to the first bowl, purple gel food coloring to the second, and green gel food coloring to the third. Mix each bowl until well combined.
4. Lightly grease a bundt pan with cooking spray (like Pam).
5. Spoon a tablespoon of the black batter into the pan, followed by a tablespoon of the purple batter, and then a tablespoon of the green batter. Repeat this process, alternating the colors, until all the batter is used.
6. Bake the cake in a preheated oven at 350°F (175°C) for 30-35 minutes or until a toothpick inserted in the center comes out clean.
7. Allow the cake to cool in the pan for about 20 minutes, then carefully remove it from the bundt pan and place it on a wire rack to cool completely.
Royal Icing Instructions:
1. In a stand mixer, combine the egg whites, cream of tartar, 3 cups of powdered sugar, and vanilla extract. Beat the mixture until stiff peaks form.
2. If the icing appears too runny, gradually add the extra 1/2 cup of powdered sugar until the desired consistency is achieved.
3. Once stiff peaks form, divide the icing into three bowls.
4. Add the gel food coloring to each bowl and mix until you reach your desired shades.
5. Transfer each colored icing into its own piping bag.
6. Drizzle the colored icing over the cooled bundt cake in a decorative manner.
7. Scatter edible eyes over the cake for a fun touch.
8. Allow the icing to set for about 10 minutes before serving.
