BIG APPLE FRITTERS

  1. In a deep frying pan, heat the oil over medium heat until it reaches 375°F (190°C).
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine the beaten egg, milk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the diced apples.
  6. Carefully drop spoonfuls of the batter into the hot oil. Fry until golden brown, about 2-3 minutes on each side.
  7. Remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
  8. While still warm, dust the fritters with confectioners’ sugar if desired.
