Spicy Seafood & Sausage Noodle Bowl

Ingredients:

  • 200g flat rice noodles or udon noodles
  • 150g kielbasa, sliced into thin rounds
  • 200g raw shrimp, peeled and deveined
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha or chili paste
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 2 spring onions, sliced
  • Fresh coriander for garnish
  • Sesame seeds for garnish

Directions:

  1. In a pot of boiling water, cook the noodles according to package instructions until al dente. Drain and set aside.
  2. In another pot, boil the eggs for 6 minutes to achieve a soft boil. Immediately transfer them to an ice bath to stop the cooking process. Once cooled, peel and set aside.
  3. In a large pan or wok, heat the vegetable oil over medium-high heat. Add the sliced kielbasa and fry until they develop a golden-brown sear.
  4. Add the shrimp to the pan and cook until pink and opaque.
  5. Stir in the minced garlic and cook for an additional minute, or until fragrant.
  6. Add the cooked noodles, soy sauce, and sriracha or chili paste to the pan. Toss everything together ensuring the noodles are well-coated with the sauce.
  7. Serve the noodles in bowls, topped with sliced spring onions, soft-boiled egg (sliced in half), fresh coriander, and a sprinkle of sesame seeds.
