Crispy, Golden-Brown Lumpia

Lumpia, or Filipino spring rolls, are a popular staple in Filipino cuisine. Ingredients:

  • 1 pound ground pork
  • 2 cloves garlic, minced
  • 1/2 cup chopped onions
  • 1/2 cup chopped carrots
  • 1/2 cup chopped green onions
  • 1/2 cup thinly sliced green cabbage
  • Salt and pepper to taste
  • 30 lumpia wrappers
  • 2 cups vegetable oil for frying

Directions:

  1. In a large bowl, combine pork, garlic, onions, carrots, green onions, cabbage, salt, and pepper.
  2. Carefully separate one wrapper and place on a flat surface.
  3. Place 2 to 3 tablespoons of the pork mixture onto the wrapper, folding the sides in and then rolling tightly.
  4. Wet the edge of the wrapper with water to seal.
  5. Repeat with remaining wrappers and pork mixture.
  6. Heat the vegetable oil in a large skillet over medium heat.
  7. Fry 3 to 4 lumpia at a time, flipping occasionally, until the wrappers are golden brown.
