Ingredients:

  • 1 lb. ground Italian sausage
  • 1/2 cup onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups beef broth
  • 1 cup water
  • 1 can (14.5 oz) Italian-style stewed tomatoes
  • 1 cup carrots (chopped)
  • 2 cups spinach leaves (chopped)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 package (9 oz) refrigerated cheese tortellini
  • 1 cup Parmesan cheese (grated)

Directions:

  1. In a large saucepan, cook sausage, onion, and garlic over medium heat until the sausage is browned and the onions are tender. Drain off the fat.
  2. Stir in broth, water, undrained tomatoes, carrots, salt, and pepper. Bring to boil then reduce the heat.
