Ingredients:
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 eggs, beaten
- 1 cup vegetable oil
- 1 1/2 teaspoons pure vanilla extract
- 1 can (8 ounces) crushed pineapple, undrained
- 1 cup chopped pecans
- 2 cups chopped bananas
- Cream Cheese Frosting:
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups confectioners’ sugar
- 1 teaspoon pure vanilla extract
Directions:
- Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, combine flour, sugar, baking soda, salt, and cinnamon. Add eggs and oil, stirring until dry ingredients are moistened.
- Stir in vanilla, pineapple, pecans, and bananas.
- Pour batter equally into prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- Prepare the cream cheese frosting: Beat cream cheese and butter until creamy. Gradually add confectioners’ sugar and beat until smooth. Stir in vanilla.
- Once the cakes are completely cool, spread frosting between layers and on top and sides of the cake.
